Gastronome Wednesday ~ Curries Around the World
In the little tropical landscaped state off the Western coast of India, Goa is home to amazing seafood which is the foundation of its cuisine. This curry is one of my favorites and one I love to curl up with on a cold winter day. The warm hints of curry, cinnamon and hearty vegetables is the perfect stick to your bones meal.
I love eggplant and in this recipe it’s slow cooked to silky softness in a beautifully rich curry with a shrimp paste foundation. The combination of these ingredients make this a dish you will come back to again and again.
